On it’s own, this is an amazing coffee cake, or an elegant dessert if topped with a dollop of rum whipped cream!
1 bag fresh cranberries
1 1/2 cups brown sugar
1/2 cup butter
1 box Trader Joe’s Vanilla Cake Mix
Spray the bottom of a 9 inch cake pan. Melt the butter into the brown sugar and pour into the pan. Follow with a layer of cranberries. (Use the whole bag…they reduce in size when baking.) Make the cake mix according to package directions. Pour the cake mix over the cranberries and bake according to package directions. Let cool for 15 minutes and flip out of pan onto platter.
